You cannot go wrong with these simple Whole30 Cucumber and Lox Bites.  The five healthy ingredients are quick and easy to work with, making this recipe an appetizer that hits all the marks.  Besides the fresh, creamy, salty, and crunchy bite you get, it’s healthy, does not require much skill, and it sure looks classy when presented to guests.

Being dairy & sugar-free is a big bonus.  For Whole30 and Paleo diets, I used Kitehill chive flavored almond milk cream cheese.  I also found smoked salmon at Trader Joes without sugar in its ingredient list.  Not on Whole30 or follow a Paleo diet? No problem, use regular cream cheese and a smoked salmon of your choice.

To fancy things up, I scored the cucumber about every 1/2 inch to create stripes.  I used an inexpensive, old school bottle opener.

I chose not to add capers, which is traditional for Bagels and Lox.  This exclusion is simply from a practical standpoint that I don’t like food that falls apart as I eat it.  The capers tend to fall off into my lap or on the floor when I take a bite.  If you desire the briny bite, by all means, include them. My suggestion is to press them into the cream cheese before adding the sliced onion.  It may act as a glue to hold them in place.

Cucumber & Lox Bites

Ingredients

  • 1 English Cucumber
  • 1 Container Kitehill Chive flavored Almond Milk Cream Cheese Spread If not on a dairy-free diet, regular cream cheese works great in this recipe.
  • 1 package Smoked Salmon, tear or cut pieces into 2½ inch strips. For Whole30 & Paleo read ingredients to make sure no sugar is added. I found one I like at Trader Joes.
  • ¼ Red Onion, sliced thinly
  • 6 Chives, cut into 1" lengths For garnish
  • 1 jar Capers Optional

Instructions

  • Use the pointed end of a handheld bottle opener and score the cucumber lengthwise to create white stripes on it. Discard the skin removed.
  • Position your knife at a 45 degree angle and slice the cucumber on the bias to create ⅛ inch thick oval slices. One English cucumber usually yields 12-16 slices.
  • Spread 1 tsp of cream cheese on each slice of cucumber.
  • If choosing to add capers, press around 4 into the cream cheese to hold them in place.
  • Lay a few pieces of the thinly sliced red onion on top of the cream cheese mixture.
  • Lay a slice of smoked salmon over the cream cheese and onions. If you want to be fancy, twist the piece so it lays in a curl on top.
  • Top the salmon with 2 pieces of chive in an "X" pattern.
