Scones are my weakness.  Give me a warm scone and a creamy espresso drink, and I am one happy girl.  I don’t care to take the time to measure and weigh out baking dough. I’ve found a scone mix that gives me the ease and simplicity I long for with the taste and texture of a scone I dream about.  Sticky Fingers Bakeries Original Scone Mix is the base I use to create my simple and semi-homemade lemon scones.

My simple semi-homemade lemon scones have crusty edges, a soft airy center, and pairs nicely with my Healthy Pumpkin Spiced Latte.  They are sweet yet the zing of the lemon adds a nice brightness.  With the scone mix, there are only two other ingredients you need to make these lovely bundles of love: Lemons and Confectioners Sugar.  I am lucky enough to have a beautiful lemon tree to pillage from, so putting this recipe together is about as easy as it gets.

Lemon Scone Zesting

You’ll want to zest all the lemons before juicing them.  I use a Microplane brand zester.  Just slide the lemon along the edge and you’ll get perfect zest every time.  You could also use the small, prickly side of a box grater but beware as it is not finger friendly.

 

 

 

 

Lemon Scone JuicingAfter you’ve removed all of the yellow zest, cut the lemons in half and juice them.  I prefer to use a handheld citrus juicer to extract the most juice out.  These are especially helpful when the lemon is a bit hard and may not release much juice.

Simple Semi Homemade Lemon Scones

Ingredients

  • 1 Package Sticky Fingers Bakeries Original Scone Mix
  • 3 Lemons Zested & Juiced, Divided
  • ¼ Cup Water
  • 1 ½ Cup Confectioners Sugar

Instructions

  • Create the Scone Dough
    In a mixing bowl, add one bag of Sticky Fingers Original Scone Mix with
    ⅓ Cup Lemon Juice
    ¼ Cup Water
    2 Tbsp. Lemon Zest
  • Gently combine ingredients until fully incorporated. It may seem like the mix is dry but keep folding and combining until there's no more powdered scone mix on the bottom. If needed, add 1 tsp. of water to moisten the dough.
  • On a parchment lined baking sheet, use a spoon to gently drop the dough in desired size. For smaller, 2-3 bite sized scones drop dough in the size of an egg. For larger scones, drop dough in the size of a large lemon.

  • Do not pat the dough down. Conversely, allow the dough to have rough edges to create toasty and crusty edges for the frosting to catch on.

  • Bake scones at 350 degrees for 12-15 minutes depending on accuracy of heat in your oven.
  • When scones begin to have golden edges, remove and cool on a baking cooling rack.

Frosting

  • Combine Confectioners Sugar with ¼ tsp lemon zest and 2 Tbsp + 1 tsp lemon juice.
  • Whisk ingredients until frosting is smooth and somewhat thick to drizzle on baked scones. You want it thin enough to drizzle but thick enough so it does not completely drip off of the scones. It should coat the back of a spoon

  • You may have to add more of each the confectioner sugar or lemon juice until it is the desired consistency.
