Roasted Cherry Tomato Jam

August is tomato season here in my little corner of Northern California.  When the tomatoes come on, they do so all at once and it forces me to find different uses and recipes to create so we can enjoy them for the short 6-8 week time they are available.  Roasted Cherry Tomato Jam is a family favorite!

My Tomato Jam is a wonderful accompaniment for many dishes.  My favorite way to enjoy it is over fresh Burrata cheese with crackers as shown in the photo.  If you’re not familiar with Burrata cheese, think soft, creamy, stringy cheese curd with a firm mozzarella shell.  It’s like a mozzarella water balloon filled with creamy goodness.

Serving Suggestions

If you are dairy-free or follow a Paleo diet, this roasted cherry tomato jam is perfect as a condiment over grilled chicken or fish, add to the side of your scrambled eggs during breakfast, mix it in with sauteed spinach for a perfect side dish, or mix it in with your favorite zoodles (or pasta) and add grilled shrimp.

It’s also great for low carb recipes or for those who follow the Mediterranean diet.  With only 4 ingredients, it’s simple and easy to make.  This makes it a big winner for me and my busy lifestyle.

Roasted Cherry Tomato Jam CookedAllow to cool before serving as this will let the juices thicken and deepen the flavor even more.  Store in a mason jar for up to 5 days.

Ingredients

  • 4 Cups Cherry tomatoes
  • 6-8 Leaves Fresh Basil, torn
  • 6-8 Cloves Garlic, leave whole
  • ¼ Cup Olive Oil
  • 1 tsp Kosher Salt
  • ½ tsp Ground Pepper

Instructions

  • Preheat oven to 375 degrees
  • Place tomatoes, basil, and garlic on a baking sheet.
  • Drizzle with olive oil
  • Sprinkle with Salt & Pepper
  • Hold both ends of the baking sheet and gently shake back and forth so the tomatoes roll in the olive oil to get fully coated.
  • Place the baking sheet in the hot oven and bake for 30-45 minutes or until the tomatoes have burst and created a thicker, "jammy" sauce. Baking time depends on your oven and the water content in your cherry tomatoes.
    Shake tray half way through cooking time to rotate the tomatoes.
    Do not remove if watery, they need more time.

Serving Suggestions

  • Serve with with Burrata cheese and crackers as an appetizer.
  • Mix into your favorite pasta variety (great on zoodles) and add grilled shrimp.
  • Use a as a condiment over grilled chicken or fish.
  • Serve along side scrambled eggs to add some zest to your morning meal.
  • Add to sauteed spinach for a tasty side dish.
