Cucumber & Lox Bites

Whole 30, Paleo, Dairy Free cucumber discs with cream cheese, red onion, and smoked salmon.

Ingredients

  • 1 English Cucumber
  • 1 Container Kitehill Chive flavored Almond Milk Cream Cheese Spread If not on a dairy-free diet, regular cream cheese works great in this recipe.
  • 1 package Smoked Salmon, tear or cut pieces into 2½ inch strips. For Whole30 & Paleo read ingredients to make sure no sugar is added. I found one I like at Trader Joes.
  • ¼ Red Onion, sliced thinly
  • 6 Chives, cut into 1" lengths For garnish
  • 1 jar Capers Optional

Instructions

  • Use the pointed end of a handheld bottle opener and score the cucumber lengthwise to create white stripes on it. Discard the skin removed.
  • Position your knife at a 45 degree angle and slice the cucumber on the bias to create ⅛ inch thick oval slices. One English cucumber usually yields 12-16 slices.
  • Spread 1 tsp of cream cheese on each slice of cucumber.
  • If choosing to add capers, press around 4 into the cream cheese to hold them in place.
  • Lay a few pieces of the thinly sliced red onion on top of the cream cheese mixture.
  • Lay a slice of smoked salmon over the cream cheese and onions. If you want to be fancy, twist the piece so it lays in a curl on top.
  • Top the salmon with 2 pieces of chive in an "X" pattern.
